Easy quick veg samosa recipe to bake in oven that fussy kids will eat?

As it says really ... must be quick and simple so using shop bought pastry.
And baked or shallow fried as we don't have a deep fat fryer.
Any suggestions?

Buy some filo pastry
Mash some potato with a little garlic, dried chilli powder, salt
Then make the samosas
Brush on the tops and bottoms with a little oil and bake.

Cube and roast some sweet potato or butternut squash (add cumin before roasting vif you like it).
Allow to cool.

Cut bought puff pastry into squares. Put a dollop of the cooked cooled veg on each one. Fold over to make triangles.

Bake in hot oven (15-20 minutes).

Use filo pastry, cook what you like/have in the fridge - I use potato, carrots, peas, onion, cumin seeds, turmeric and fresh coriander.

anniehm, do you cook the carrots first? How do you combine with the potatoes?

Probably a bit late now, but all samosa fillings should be cooked. All you want to do is cook the pastry.
