I’m stuck in a soup rut and would love to try some new recipes, ideally healthy but filling.

Parsnip and sweet potato soup. I normally do
2 sweet potatoes
2 parsnips
1/4-1/2 pint of vegetable stock

Cream
Peel and chop veg, cook in vegetable stock until soft and tender and blend with hand held blender. I prefer using a proper blender because I can't stand lumps or textures!! Depending on how creamy I want it I'll sometimes add more and blend it and other times I'll just swirl it through before eating it!! Someone else I know cooks it and then mashes it with a potato masher instead of blending it.

Look for Turkish red lentil soup (mercimek çorbası) online. Delicious, filling and very healthy.

Cool green summer soup! Tastes good warm in winter too!
A blended mixture of cucumber, peppers, potato, peas, onion/leek, spinach. Tbh anything green!

Also chicken drumsticks boiling with potato, sweet potato, onion, plantain, carrots and sweetcorn with chilli and black pepper. Delicious. The chicken will slide off the bone and you will have a chunky soup or broth if don't add flour. I prefer this soup as a broth though tbf

Leftover casserole, thinned down with stock, whizzed up with a tablespoon of creme fraiche: cream of chicken and veg.

Delia's curried parsnip and apple

Leek and potato - 3 leeks, 2 potatoes, some butter, chicken stock, boiled then whizzed up.
