Can anyone help me trace a carrot recipe with rice that a Spanish boyfriend used to make?

Long shot but I' really craving it despite not having had it for years. It was baked and contained carrots rice and cream cheese, and not a lot else afair.

He was a great cook and was half Spanish, half Italian, but don't know if this was just something he made up as we were poor students,

Any ideas? It was great comfort food, but I've no idea how I'd go about it; I'm useless without a detailed recipe to follow!

I have had this op it is amazing. Jack Munroe does a sort of take on this which might be a good starting point. I think there are lots of variations of the recipe. It is so nice and sweet isn’t it. I have no idea what it is called though.

Spanish person here. Those ingredients aren’t in any Spanish dish I can think of. I Googled and came across this: superpola.com/recetas/pastelon-de-zanahoria-queso-y-arroz/ which looks to be a Caribbean recipe. Is that it?

My Pakistani friend used to make a sweet carrot pudding called Gajar Ka Halwa - don’t think it has rice in it, but the carrots were grated so kind of had the texture of rice.

This uses orzo but I’m sure you could use rice instead.

Thank you all. I honestly think he made it up - I know it's not typically Spanish. The links look like good alternatives though.

There’s quite a lot of gorgeous Portuguese rice cakes, might be a place to start

I’d adapt that recipe. BROwn the onions, carrots and garlic. Add the rice and fry for a minute. Add the stock and stir, then put in oven dish and bake. When it,s ready stir through the cream cheese and return to the oven for a few minutes.

Sounds like a version of an Indian carrot cake where carrot cakes are steamed instead of baked, and so the boiled rice or rice flour absorbs excess water. If your ex was using it in a baked cake he likely was using too much liquid!

It sounds like an Italian style baked risotto. I’ve made it with carrots but much prefer pumpkin at this time of year. Added Philadelphia or mascarpone would give more creaminess but you do need salt to contrast the sweet carrots or pumpkin.
