Going veggie

Just discovered a veggie lasagne recipe with aubergine and courgette and enjoyed it a million times more than the meat version.

Now want to add more vegetarian dishes to our meal plan. What is your absolute favourite veggie dish?

Nigel Slater's spinach and chickpea gratin. If you're a 'proper' veggie (which I'm not, I just don't eat meat,) you'd have to swap out the parmesan for something else I think. It is SO good on a winter's night with some crusty bread. Paneer curries are also excellent, noodle miso soups with lots of veg, vegetable paella, thai vegetable curry. You really don't need meat!!

These are some of the things I make regularly:
Sweet and sour cauliflower (I do this with egg fried rice)
Somerset stew with mash
Veggie bolognese
Quesadillas
Pasta with mushrooms and goats cheese

Basically all of the bbc good food veggie section plus stuff I’ve found on Pinterest.

We also eat a lot of Indian food!

Tacos/fajitas/enchiladas are my favourite things to have for dinner. I cook some peppers, onions and black beans with cumin, chilli powder, ground coriander, salt, pepper and add some lime juice just before serving with lettuce, cucumber, tomato, soured cream and cheese. Yum!

I make risotto with leeks, peas and asparagus which is delicious.

Cauliflower and broccoli cheese is a meal in itself for me!

Veggie roast dinner - all the vegetables plus veggie stuffing and gravy.

Dds absolutely love homemade falafel (and so do I) despite none of us being veggie.
Don’t really follow a recipe, just whizz up
Some chickpeas with spices and herbs, onions, garlic, tahini, harissa and an egg or two, fry it in little balls or oven bake depending on texture/time. Serve in wraps with tzatziki, grilled halloumi, leaves and chilli jam.

They also prefer a bean chilli on nachos to a meat chilli.

Some great ideas!

Brain it's just a red sauce (tinned tomatoes x2, red onion, garlic & mushrooms) usually do that in the slow cooker. Then just layer up as usual but putting sliced aubergine and courgette on top of the red sauce. I use the white sauce from Aldi, which is delicious! Then a load of mozzarella on the top and bing in the oven on 180 for half an hour. Delicious!
