Can you recommend a special place to stay please?

It was DH and my ten year wedding anniversary a few weeks ago. We dont normally do much for anniversaries but as it is our ten year and my parents are willing to have the kids we are planning to go away for a weekend.
I would love your recommendations for really lovely, luxury, foodie places to stay.
We have cast a fairly wide net, looking in South Wales, Somerset, Devon, Cotswolds, Herefordshire areas.
We very rarely go away but have just come into a bit of money and would really like to treat ourselves. I find myself a bit overwhelmed and would love your recommendations.

We stayed at the Manir House hotel above on a Gourmet Food and Wine Lovers two night break a few years ago. Beautiful hotel, first night includes 8 course meal with wine flight, second night is standard 3 course meal, there is afternoon tea included too from memory.

It was amazing but not cheap. We’d love to go again.

Ellenborough Park in the Cotswolds is lovely and has a nice spa area and outdoor heated pool
