Turning off microphone on apps

There was a thread a while ago about turning off the microphone on apps on your phone. Can anyone remind me how to do it? Can't work out how to!

I've got an Android ☹️

I'm on android (samsung s6) and for me it's settings, apps and then each app individually to set permissions like microphone or access to contacts etc

Settings
Google -> Takes you to Services so look for Search (mine says Search, Assistant and Voice).
Voice
Voice Match or OK Google.
Switch off.
You can switch of for maps too but it is considered useful.
