chicken and ham pie... what sort of cream

recioe just says 200ml cream

single or double?

from memory i think one of tgem will split?

Double or creme fraiche depending on what you're doing with it

Double. Just don’t boil it hard and it won’t split. You can add some cornflour to the cold cream to prevent splitting and it’ll thicken it up without having to reduce.

Even better is creme fraiche! The slight sourness works really well.
