Parkin but without oatmeal?

Do you think it would work? I love the taste of Parkin but not the gritty texture it has. Ive found a recipe online but there are no reviews. Do any of you know of a good recipe or have any opinions about the no oatmeal concept please?

I'm not a yorkshire-person, but DH is, so I've learnt much about parkin Grin

There are three kinds viz

  1. oatmeal parkin
  2. sponge parkin - ginger flavoured cake - similar consistency to a victoria sandwich
  3. parkin (gingerbread) pigs - for consumption on Plot (Bonfire) Night

All are thoroughly delicious.

I would suggest just a dark gingerbread. I really like our Leigh’s one. Occasionally I use wholemeal flour to go a bit gritty but not too gritty!!

James Martin has one on the BBC website without oatmeal. It's really nice but mine only took 45 mins to cook. It's even better the next day when it gets more sticky.

Nigella's Chocolate Gingerbread cake recipe always reminds me of Parkin. It's spicy, treacle-y and damp, but not as heavy as Parkin (which I think is from the oatmeal)

It was the James Martin one I found I think Disford. Good to know it’s nice.

I didn’t know there was an actual thing as sponge Parkin Concrete. I don’t feel so weird now. I think I could deal with wholemeal flour. It’s the grittiness of the oatmeal that I don’t like in traditional Parkin.

Thank you everyone. Really appreciate the help. And yes I agree we are probably talking about ginger cake now not Parkin but that’s ok .
