Help me sort a diet for my mum, no red meat

Totally posting for traffic sorry

Mum has got thyroid issues which cause her to gain weight, depression and anxiety and I suspect is anemic as she is constantly tired.

She does not like the taste of red meat, doesn't like pork, or duck. Literally only animal she eats is chicken and fish, but she only eats haddock, plaice and Pollock. She does like tinned salmon but won't eat it fresh and doesn't really like any other kind of fish. She does like shellfish. Doesn't like fresh tomatoes but will eat them in a sauce or ketchup.

No allergies.

Help me create a diet for her that will hopefully bring her iron levels up? She doesn't want to take anymore medication from the doctors.

Well, what about chicken or turkey sausages. Aldi sell them and Asda sells a range in the Indian freezer section. Both Aldi & Asda sell turkey bacon rashers

Could your mum make a mixed fish pie? Poach the mixed fish. Lots of recipes on line for item.

Also, would your mum consider sundried tomatoes chopped up in a salad? They're really tasty. I drain the oil, then chop up.

I also batch cook basic marinara sauce. Add Quorn Swedish meatless balls and serve with pasta.
