What are your favourite vegetables?

I realise that it's the most boring question in the world but I'm trying to eat a mostly plant based diet and though I love vegetables and eat a lot of them it's always good to try 'new' vegetables and new ways of preparing them.

So which vegetables do you eat most often and how do you prepare them?

Aubergines - hollowed out (I use a grapefruit spoon) & stuffed with giant couscous, or the tiny pasta shapes, chopped tomatoes, squeeze of lemon juice, & various Mediterranean flavourings. Maybe add some pine nuts or feta. Top with sliced tomato. Bake until done. The leftover aubergine, if chopped up & mixed in a bowl with the same ingredients, will make a meal for the next night. Bake in a covered dish.
It also works with harissa, various other herbs etc.

I like roasted cauliflower & broccoli, in a tomato, garlic, & herb sauce. Very easy. Although if you're going to make enough sauce for more than one meal, don't store the excess in a plastic tub... yes, apparently I am that silly! BlushGrin

Parsnips and/or carrots - roasted with lemon juice & mustard. It doesn't sound likely but it's lovely. I found it in a vegan recipe book, many years ago.
