Doing a birthday lunch and their favourite thing ever is coconut. I wanted to make Delias fresh coconut cake. I’ve made it before but only ‘on the day’ and I could do with making this one the afternoon before due to time constraints.
It uses a proper fresh coconut, grated in a food processor, over a marscapone icing.
Anyone know how long a fresh grated coconut will stay nice and fresh and moist. Will it survive 24 hours if the cake is kept totally airtight?
