Vegetarians - help!

If someone was home cooking you a nice dinner, what would your perfect menu be?
I'm not veggie and I'm stuck for inspiration!

Have you never eaten a nice meal without meat in? Ever?

For me it would be Indian, a mix of veg, lentils, rice; or a veggie pie with roast veg gravy.

How much time away is it? The Spicery do amazing recipe kits where they send you the spices and a shopping list...

For a starter, I would love wilted spinach with hot goats cheese on top.
Followed by a nut roast or a mushroom pie, with roast potatoes and parsnips, and steamed veg, bread sauce and a vege gravy
Then Waitrose's apricot tart and coconut yoghurt.

What time are you expecting me?

No need for the snark eel and lord. Was just looking for ideas and I prefer to hear what other people enjoy rather than Google.

Sorry. I am just so fed up of this idea that not eating meat is some sort of strange subculture and no normal right-thinking person can even begin to imagine what there is to eat other than meat that I can't not snark.

I intended the thread to be more like, what's your ideal home cooked dinner. Just the fact one person doesn't eat meat sounds relevant otherwise i might have got loads of replies about e.g. steak
I love thinking about food....

I am not veggie but I would like:
A mushroom and herby leaf salad to start
aubergine “parmigiana” for main
A lemon tart for pudding

Or spinach and feta pie

Actually I’m not sure whether the cheese can be veggie in a parmigiana.
Griddled vegetables are good

Or a thali works well too.

I once posted here asking for veggie menu suggestions and someone replied 'a beef dinner'. Have never forgotten that. Grin

My fav is big flat mushrooms stuffed with ratatouille and cheddar on top. Or a mushroom omelette. Or mushrom wellington. Yum!

See, I loathe mushrooms, so it really helps to have some idea of what this person likes.

I like things like Yottam Otolenghi's stuff for a one off extra nice meal. He has various books all of which have nice ideas.

I like it when the veggie option is similar to the meat option (e.g veg chilli vs meat chilli) or when just the meat element is switched out for the veggie but the sides/ veg/ sauce etc. are the same (e.g if you're cooking a roast, switch the meat for a nut roast or a veg pie, but keep the rest the same)

I’m not veggie but eat mainly veggie at home.

I eat a lot of Thai food. So Thai curry, just check the paste doesn’t have shrimp paste in it and don’t use fish sauce.

Super easy and had loads of veg in it. Aubergine, courgette, spinach, baby corn, water chestnuts. Sometimes I do quorn pieces in it too.

Dale Pinnock has a lovely recipe for kale and new potato salad with peanut butter and chinese 5 spice. It is fabulous.

I often make vegetable lasagne for my family. I use almond milk and nutritional yeast for the "cheese sauce" and nutritonal yeast and breadcrumbs for the topping.
