What should my high-end, artisan business be?

Saw some friends last night. He works in financial services and she was a SAHM who went on a candle-making course and has now started her own high quality home fragrance business. It's going brilliantly! She's not quite Jo Malone yet but she is making real money and getting satisfaction out of doing something herself. It's really inspired me. Then I got the Waitrose Food Illustrated this month and red all about the entrepreneurs who have started beetroot ketchup businesses or are making fruit-infused vinegars and supplying them nationally.

I want to jack in my corporate life and start something! But what? Hipster Honey? Hand-painted soup bowls? Willy Wonka's lickable wallpaper? I need ideas! I'm going to head to the community college tomorrow to sign up to something. What would you do?

I know 2 separate people... one who makes fancy granola and the other gluten free cakes/ treats.
