My veggie bed is empty today, all cleared out.

What can I put in it during the Autumn Winter?

If you are not wanting to grow anything then you can get some type of nitrogen fixing "green manure" seeds that you then dig in again come spring as green fertiliser. Google "green manure" and you will get lots of options!
