Chuffing kids and their dietary requirements

My 15 yr old ds became vegetarian in June, I have tried really hard to accommodate him but am finding it difficult.

Dh and I are happy to eat veggie food but I want to give ds8 meat as he is not keen on meat alternatives.

Ds15 does not like......mushrooms, eggs, peas, kidney beans, jacket pots, chickpeas, aubergines, tuna, any fish,black beans, baked beans. It’s a nightmare!!! I hate feeding him imitation chicken and quorn sausage rolls but am struggling to find other food for him.

Any ideas?

With that long list of items he doesn't like I'd be telling him he is responsible for finding recipes and cooking dinner at least one day a week.

If he's eating fish he isn't veggie.

Get him to suggest some meals and make them. Not unreasonable at 15.

Plus it isn't hard to do a veggie alternative to most meat meals. It isn't like he's gone vegan.

Surely if he's a vegetarian he won't be eating fish anyway so it shouldn't matter if he doesn't like it.
