Mincemeat is very easy but comes with a warning that once you’ve made your own you’ll not settle for M&S ever again. It makes good presents though.
Plenty of recipes online -try Delia for basic quantities - and easy to modify into your own favourite recipe. We like glacé cherries, nuts and brandy in ours.

Mix it all up, put to mature/plump overnight and put in simmering oven for about four hours. Then jar. Very, very easy.
