What are your most flavoursome and delicious hearty soup recipes?

I need to start making my own soup. Have been living off it recently (fresh soups from chilled aisle) and they're nice but expensive and I'm sure my own would be better. I do make a great chilli soup but I need more options.

Particularly keen on anything hot and spicy, or extremely hearty, comforting chicken soups, etc. Or a really nice tomato and basil.

Basically can you inspire me with amazing soup recipes Grin

Also, can I make soup in my slow cooker? With a view to freezing portions for later use?

Hi,

This is my go to soup, it's delicious!

3 handfuls ish of red lentils
1 tin green lentils
3 carrots
2 cm wodge of coconut cream or 1 tin coconut milk
1 apple
Onion/leek/garlic if you like
leftover bits - chuck 'em in. I've used up odd bits of mash etc in here.
Cumin
Turmeric
Seasoning

  1. Rinse the red lentils really well in cold water and chuck them in a big pan three quarters full of water.
  1. Bring to boil and bubble for 10 mins or so, scooping off the scummy water from the top as you prep the rest of the ingredients.
  1. Chop veg/apple roughly
  1. Rinse and drain green lentils
  1. Add everything to pan except spices and seasoning
  1. Cook for about 20/30 mins or til the carrots are done
  1. Add coconut, stock cubes/salt & pepper/leftovers
  1. Fry off spices in a bit of oil and add, or just simply add if you like
  1. Simmer on low until the smells are driving you mad. Then blend and eat.
  1. Garnish with what you fancy. I like a dollop of yoghurt/sour cream. DH likes chilli flakes and coriander.

It's delicious - enjoy. Grin

This soup is amazing. A friend gave it to me - I think it's a Weightwatchers recipe. Just delicious (and do add the sprinkle of cayenne before serving - adds the perfect amount of heat Smile).

I really like this lentil and vegetable soup it's really tasty and healthy. If I've cooked a gammon then I often use the resulting ham stock to make a yellow split pea soup www.goodtoknow.co.uk/recipes/yellow-split-pea-and-ham-soup; I think yellow split peas are a more appetizing colour than green ones. And I love this cream of tomato soup which tastes like Heinz only better.

Sweet potato and coconut.

Sweat an onion
Add a cubed sweet potato
Add some veg stock
Simmer till soft
Blend
Add coconut milk
Add chilli flakes and garnish with chopped coriander.

Me and DH cooked soup last weekend - all day!

We did,
Mulligatawny
Pea and ham
Roasted red pepper
Parsnip
Mushroom
Sweet potato and carrot
Cheese and broccoli
Butternut squash and something, but I can't remember what!!

Each one got is 6 or 7 portions, so I think we'll be OK until about Christmas! Grin. We'll restock over new year, with any left over cheese, ham and turkey.

@Lollygaggles I just made a big pot of your soup and it's bloody lovely. I had no apple so added a sprinkling of coriander and a squirt of lime; still good.

I roast a tray of the following
Sweet potatoes
Carrots
Leeks
Butternut squash
When they are nicely cooked and a bit caramelised Wink I put them in a pan of veg stock and add a generous lot of red lentils
Simmer till the lentils are cooked and then use a hand blender to make a smooth soup
If I want it to have a bit of spice when I roast the veg I sprinkle some ground cumin, ground coriander and chilli flakes over the veg before roasting

I am a bit lazy, so tend to create soups from stuff found in the frozen aisle. Am having a go at that lentil soup now!
Curried parsnip soup:

1 x onion
3 x garlic cloves
i x bag of frozen parsnips from supermarket
tablespoon of curry powder
Handful of coriander (optional)
1 x chicken stock cube
Salt & white pepper
Tablespoon of sugar / sweetener (optional)

I fry off the onions and garlic in a bit of olive oil, then chuck in the parsnips. Then cover with boiling water and chuck in the rest of the ingredients. Once the parsnips are cooked, I blend until smooth.

I have a parsnip and apple on the hob at the moment

Sauté onion, add 4 large parsnips, 1 cooking apple, 1 small potato, chicken stock. Summer til all soft then purée.

I sauté plenty of garlic, leeks (and a little bacon) in butter, then add diced potatoes and cover with completely with chicken stock (usually home made stock but a stock cube if I don’t have any). When the potatoes have cooked, I blend it all. Add more liquid (either a little more stock or milk) if it’s too thick and season to taste with salt and pepper.

I like
Chicken with sweet corn, coconut milk and stock with chili - I cook on blended in the kettle then add extra sweet corn so it's got some crunch to it

And
Butternut squash, butter beans, carrots garlic, onion with chili and stock
I often add some sour cream when eating if it's super hot with chili Grin

My fave is this:

An onion, chopped
Butternut squash (whole small/medium, peeled and large cubed)
Ginger (I reckon about an inch of fresh, grated, or a good teaspoon of the lazy ginger)
One not too hot chilli or a teaspoon of lazy chillis or frozen ones.
Salt and pepper.

Add veg stock to cover it, and simmer until the squash is tender. Blend with a good dollop of creme fraiche or even Philly cheese. Depending on how you like it, it may need a bit more water.

It's delicious. Mix of spice which balances the sweetness of the squash.

Roast butternut squash and red pepper soup. Roast chopped but squash,red pepper, onions and garlic together in some olive oil with salt pepper and paprika to season. When all roasted and somewhat caramelised. Add tin chopped Tom's, and blitz with hand blender. If need be let down to right consistency with some boiling water. Adjust seasoning. Serve with cubed feta and toast. Delish!

I made curried squash soup this week, very cheap and easy to make.

1 large butternut squash/2 small ones
3 shallots
3 gloves of garlic
1.5l veg stock
1.5 tbsp curry powder (I used medium heat and it gives a nice kick)
Handful of fresh coriander

Dice the shallots and garlic and soften on a low heat
Cut squash into cubes then add to pan with veg stock and curry powder.
Simmer for half an hour or so then add fresh coriander and blend.

Delicious sweet wholesome tomato and basil soup.

I don't weigh anything just chuck it all in.

Fry onion in some fry light/oil, add the juice from chopped tomatoes, tomato puree add 2 clove garlic, 2 carrots, 1 litre chicken stock, boil. Blitz all up and add rest of chopped tomatoes. Plenty of salt and pepper and basil. Taste.
