What are your most flavoursome and delicious hearty soup recipes?

I need to start making my own soup. Have been living off it recently (fresh soups from chilled aisle) and they're nice but expensive and I'm sure my own would be better. I do make a great chilli soup but I need more options.

Particularly keen on anything hot and spicy, or extremely hearty, comforting chicken soups, etc. Or a really nice tomato and basil.

Basically can you inspire me with amazing soup recipes Grin

Also, can I make soup in my slow cooker? With a view to freezing portions for later use?

My husband loves my thai butternut squash and peanut soup. Cut a bns in half and scoop out seeds, oven bake at 140 until soft and good and brown ish. When cool chop into bits, skin and all. Fry off.a good tbsp of tom yum soup paste, add bns, chicken stock and a tin of coconut milk. Stir in 1-2tbsp of peanut butter and some chopped coriander, delicious. Could add noodles.

Onion, red pepper, diced potato, diced squash, diced carrot, celery. Cook in butter for ten mins. Add a big tablespoon pataks curry paste. Sweat for two mins. Add big handful red lentils. Half tin chick peas. Stock cube crumbled. Bay leaf. Garlic powder, whatever you have. Add water so it just covers the veg. Bring to boil, reduce it to a simmer for 15mins. Remove from heat. Add big handful of spinach. Blend with stick blender. Salt and pepper to taste.

My emergency soup dish (takes 20 mins) is ... tin of tomatoes, tin of butter beans, chicken stock, basil, garlic, a few carrots. Throw it all in a pan and bring to the boil then simmer until the carrots are done. Whizz a ladle full to thicken and return to the pan. Grate some parmesan on the top. Bread. Done!

You can't go wrong with a little Delia. It's our go to soup for cold days and is so filling. It freezes brilliantly.

Placemarking! These sound so yummy... can I just add that I’ve recently discoversd M & S Fig & Hazelnut loaf. Add some unsalted real butter and with home made soup is heavenly 😍😍

Delia’s soup book is great too. There’s a really nice carrot and coriander recipe and a lovely Lebanese soup which is delicious.

Broccoli, peas, onions, basil (basil pesto from a jar is lovely too) smidge of garlic or ginger, not both. Chuck in any other veg/salad things that are dying in the fridge. Cook in water or stock and blitz to the consistency you like. Lovely as it is but you can use up pretty much anything in with it or add lentils/potato/bits of crispy bacon/ crumbled Stilton etc. I like it with a heel of cheese ancient dried up cheese slowly disintegrating in the middle. Why won’t my phone let me put in paragraph spaces anymore?

I love to make chicken taco soup

I usually use the left over chicken from a roast and make a classic chicken soup with whatever selection of veggies I have and stock. Then just add a can of chopped tomatoes and a Mexican seasoning packet (the ones you use for tacos or fajita) from old El Paso or something. Then I serve it up a bit like a taco with a few slices of avocado in the middle, sour cream and loads of cheese!! Absolutely delicious and so comforting. I sometimes also add cream but that's because I'm doing LCHF, probably a bit excessive otherwise.

You could adapt it with a few taco beans or coriander and lime, anything Mexican.

Oooh, there's another one I like from Olive Garden which is chicken gnocchi soup. Same again with the basic chicken soup using left overs but then add cream, cheddar cheese and gnocchi.

Sorry I'm not good with exact recipes, I just tend to do everything by eye.

Bog standard lentil is the favourite in our house. Half a dozen rashers of streaky bacon fried, couple of big onions and a couple of carrots sweated off, a cup of lentils, a couple of stock cubes, season and sprinkled with parsely.

I tend to batch cook soup at the weekends, and put in the freezer in one-person containers for lunchtime eating. My two current favourites are:

Red pepper and tomato - really comforting.
Soften an onion, and then add in some chopped red peppers & some garlic. When they're softened add a tin of tomatoes, a bit of tomato puree, a veg stock cube and some water. Blend thoroughly.

Broccoli and blue cheese.
Soften an onion, add a stock cube & water, and put the chopped up broccoli (including all the stalk) in. When the broccoli is soft, take off the heat. Add crumbled blue cheese to taste at the point that you're blending it, so you get the full blue cheesiness.

An incredibly quick cheap and easy store cupboard one is
Half an onion
Garlic
Tin of chickpeas
Tin of toms
Stock cube
Cup of water
Moroccan spices
Chuck it all in and cook for about 20 minutes. Blitz it up
I often serve it with yoghurt mixed with cumin on top

I love soups but am not very good at following recipes.

Most of my soups start the same way - gently cooking some chopped onions in butter or olive oil. Then chopping up whatever veg I fancy/is about to go off and sautéing for a few mins. Then adding water and stock (and beans, lentils, quinoa, whatever) and simmering for about 20 mins. Don't have on too high a heat.

Once the hardest veg are soft I blend it to smithereens, adding more water if necessary and finally, I frequently add a large dollop of Philadelphia or creme fraische to make it creamy and delicious.

This has turned out to be a fairly fail-safe approach and most of my soups are super-delish.

Big soup maker here, Tuscan bean soup /stew is a house fave but my absolute favourite is celery soup 😋

Mine is really lazy. Buy frozen carrots and frozen leeks from Tesco (or a bag of frozen casserole veg) . When you want soup chop up an unpeeled potato or two (dependent on size and whether you want it thin or thick). Add to a pan with a large portion of the frozen veg (at least 300g and more if you want a big pan full of soup) and some red lentils. Add some butter for flavour if you want. Cover the veg and lentils with hot water. Add a stock cube if you want (I don’t as I prefer to season when I eat it). Bring to boil and simmer until it all goes a bit mushy. Then blitz with a stick blender to your preferred consistency.

The labour in this is under 5 minutes start to finish. I make a big pot and then reheat in the bowl. It comes out slightly differently every time as the veg mix and quantities are so variable but it’s always lovely and also healthy. I add garnishes and seasonings before I eat, it always needs salt as I don’t use any when I cook it. After that it’s up to you, homemade yoghurt and sriracha sauce are my current favourites.

By far my favourite homemade soup is sweet potato and chorizo. It's delicious. From memory it's roughly: Stock (vary amount according to preferred thickness), 2 carrots, 1 onion, 2 sticks celery, garlic, sweet potato (I think 600g), 1 big chorizo sausage, some chilli. I tend to blend 2/3 of it and stir in the rest as nice big chunks. Mmm now I want this! It's a Jamie Oliver recipe
