Quick - is it too early to make tomorrow’s dinner?

It’s chilli done in the slow cooker. Can I prep it now and leave it in the fridge until morning or is that too long and the veg will go funny?

Na I would deffo prep it whilst you have time. You could always squeeze a bit of lemon juice over the veg to stop it going all weird maybe?

I find that chilli, curry etc benefit from an overnight rest, seems to give a better depth of flavour.

Thank you both. Normally grate it carrots and veg to hide them wasn’t sure if they’d be odd over 24 hours later but I’ll risk it rather than doing it at 11pm tonight which is the other option

Yup, cook it now, fridge overnight, reheat it tomorrow. The flavour will improve from the rest.

I think OP is saying is it okay to prep the veg and leave that overnight rather than make the whole chilli and have that tomorrow. I.e leave the chopped up onions, garlic, celery and carrot in the fridge prepped tonight ready for dumping in to the slow cooker tomorrow morning (along with the other ingredients I can only assume).

I do this with a casserole, make it the day before and keep it in the fridge then cook the next day. Turns out great.

Yup. Didn’t really have time to cook it all this afternoon otherwise that would have been a better option. Everything is chopped and mixed up in the slow cooker pot in the fridge ready to be put on tomorrow

If you grate carrot to put in cooked meals, you can grate a ton in the food processor then freeze it and just take what you need. Doesn’t work brilliantly on salads but absolutely grand in a stew/chilli etc
