Keeping cake batter in the fridge

I have to make cakes for work and I am out for dinner the night before so short of time. Can I make the cake mix ahead while I have time and then bake it the next night? Will it be rubbish?

You can however I would think that there might be issues with the baking powder/raising agent and the cake not rising as it should.

It very much depends on your recipe. What might be easier is to bake your cakes and then freeze them until you need them. Most cakes freeze really well.

No, you'd loose all the air you'd beat into it.

Get a box mix and do it on the night you need to.

Bake, freeze, defrost on morning and dust with icing sugar to perk them up a bit.
