I have just deleted a number from my contacts. I know this sounds a little daft but I didn't want to block as I want said person to contact me if they wish but want to stop myself being able to contact them first as that always seems to be the case

So in WhatsApp they have also disappeared, completely deleted all chat with them.

My WhatsApp settings for last seen, profile pic and status are all set under privacy as 'contacts only' so now that said person is no longer a contact they can't see these things? Is that right? But could still message?

They are most likely to contact on WhatsApp if at all

The whatsapp list pulls from your contacts list. So unless you add them back in to whatsapp they won't reappear.

Yes I understand that.

What I am asking is, they will still have me as a contact on their phone... so what will it show for them? As they shouldn't be able to see my profile picture, status of last seen if they are not my contact

They control who is a contact on their phone. If they have you as a contact, they can whatsapp/text/call you if you haven't blocked them. They can't see your pic or details in WhatsApp because they aren't in your contact list and you have set your privacy settings to show these details only to people who are contacts.
