Chicken coated in paprika and flour, fried in butter with onion and chestnut mushrooms, add stock and simmer, then double cream.

Like a chicken stroganoff I suppose.

Chicken thighs, chorizo, red onion, baby potatoes, peppers, oregano and orange zest in one dish, oven for one hour. Super simple and lush!

We like this one pot chicken and rice dish. I use mini chicken breast fillets instead of thighs and I add in a bit of extra paprika and a splash of dry sherry to bump up the flavour.

I like to fry some onions, add some chicken pieces (can be thighs or breast)

Then I add sliced courgette, chunks of red and yellow pepper. Tin of tomatoes, mixed herbs, squeeze of garlic and some chicken stock and let it sit on low bubbling away until the chicken is cooked and the veg is soft.

You could add cubed new potatoes but I like to roast them in the oven and serve with the above.

I love chicken thighs in their skins in a roatsing pan with a glass of white wine chucke dover them, lemon zest, garlic and fresh rosemary, sea salt and pepper, and chunks of onion or whole shallots. The chicken comes out golden and crispy, the wine makes a thick, bubbly gravy and the herb and garlic smell is heavenly. Also, takes about 5-10 mins to prep, maximum. You can also add baby potatoes in their skins to roast along with the chicken. Then all you need is some steamed greens or salad and that's the whoel meal. One pan to wash up, almost no prep.

Scooter chicken. It’s a Mumsnet recipe which we first made about ten years ago Shock. It’s roast chicken in creme fraiche which roasted veg. Delicious!

Chicken pieces (with bone and skin but I trim the fatty bit) roast with potatoes, paprika, chili and oregano when all cooked add halved plum tomatoes (fresh not tinned) and large slices of pepper for the last 15-20 minutes

The tomatoes and peppers soak up he juices. I serve with bread and slices of lemon

Can change the herb/spice mix to whatever you fancy

At the moment it’s my Easy Chicken noodle soup. Bring a pan of chicken stock (I use Kallo) to boiling and chuck in some spaghetti snapped into pieces. Once it’s cooked stir through some pre cooked chicken breast (great if you have left over roast) and some sweet corn (or peas if you prefer). If you’re feeling fancy a few pinches of fresh parsley 😁
It’s literally the easiest thing to make and it’s so lovely. Quantities for 2 adults I reckon:
600ml stock
80-100g pasta
1-2 chicken breasts
50g sweetcorn
