Sardines on toast

Slightly strange question I’m afraid. Just discovered I love sardines while on holiday. Fancy them for tea tonight. What do I add (if anything) to make them amazing?

I put two slices of thickly cut naice bread under the grill and toast one side. Then spread the non-toasted sides with the sardines, some sliced tomatoes and thinly sliced red onion. Few drops of tobasco and Worcestershire sauce and then pop back under the grill for a few mins. Yum 😋

Hot sauce or salt, black pepper and lemon juice. Mackerel is better than sardines tho.

Wound up frying them with some butter and Worcester sauce, then adding to toast with more L&P. Nicest tea I’ve had in a while

I love them too, DH hates bones, so we do the following...

Butterfly them (gut, heads off, lay skin side up, flaps out, and flatten from the tail, turn over and the bones should pull out easily, cut the spine away from the tail).

Coat with flour, egg, then a mix of breadcrumbs, Parmesan and parsley (all blitzed together).

Shallow fry and serve with lime mayonnaise (on toast or with chips).
