Turkey mince, with a date of Jan 2018, been in the freezer since day of purchase.

I prob would unless it has obvious freezer burn. I’d expect the texture might not be the best though.

Freezer time and use by dates are different. Some packages say how lunt an item can be frozen. As for this I'd happily use it. It's not going to age suddenly 8 months upon defrosting.

Looked a bit dry but fine once mixed, I made cheese stuffed meatloaf and am eating it as we speak.....

Yeah I would. It won’t be as good as it was when it was first frozen but it’s not going to kill you.
