Ultimate paella recipe?

Can anyone help? I've not made it before and there are so many options out there including the controversial chorizo debate I do have a lovely bag of seafood in the freezer I need to use, does that go in it?!

So what's your favourite paella recipe?

Moro cookbooks contain delicious paella recipes - they do include chorizo in some, and I see that the recipes are sometimes just called ‘rice’, but they certainly are paella.

I learnt to make one in Spain a few years ago with rabbit. So brown off your chosen meat, remove and then brown the onions. Once the onions are done deglaze with cava or white wine and add your meat back into the pan to cook. In a paella pan, cook off your seafood in olive oil, start with the bits that take longer, add the rice making sure it’s coated in the oil, add your stock from the chicken/ rabbit cooking in the other pan along with paella seasoning and meat. Leave to cook, turn off the heat and cover well with foil so any moisture gets absorbed.
This was a few years ago so I hope I’ve remembered it correctly.. No chorizo though.

I do remember she told me stirring wasn’t too important and that there was always a fight for the crispy bits of rice left at the bottom of the pan!

I use this paella seasoning mix from Tesco

Paella Seasoning Mix

I basically follow the recipe in the back but leave out the chorizo because I don't like it and add in a good splash of dry sherry to the chicken stock which makes it extra delicious!
