I wonder if it's seaweed in other parts of the world? I did try to google it at the time of discussion but couldn't really find an answer ...

Crispy seaweed is made with cabbage/spring greens, we make our version with kale in the oven at home.

@margotsdevil I read it on an info board at Urquhart Castle. I just looked on Wikipedia but the entry on the North Sea was so long I lost the will. It did say this on Loch Ness though:

One I've heard (not verified), is the connection between the Plimsoll Line on a ship (meaning a ship is overloaded if the line goes below the water), and the rubber-soled canvas shoe.
