How do you motivate yourself to eat properly?

I'm a single parent, I work full time, and I do shifts so don't have any regular pattern to my weeks, I do night shifts and 12 hour days and so on.

I find it very VERY difficult to eat properly. I'm always so tired that meal prep and actually cooking for myself just doesn't seem to happen. I end up coming home and just eating toast and biscuits.

I really want to eat properly, I worry about my health and I feel my energy levels would benefit which I could really use!

We've all got busy lives, how do you manage?

Try having stuff in your fridge that's easy to throw together. Cooked meat, salad etc. Even if you just make a glorified sarnie with it, it's a bit more variety in your diet.

I start by just having three meals a day. Brown toast x 2 for breakfast and a milky coffee. Tuna salad for lunch and piece of fruit afterwards. I hate cooking so I have half of an M&S cottage pie, steam veg and gravy for dinner. I drink squash or water .
If I'm hungry I'll have some fruit or a yogurt.
This is how I start to control my eating. Far more nutritious and healthy than 10 packets of crisps, sandwiches, cake etc

Do you have an oven with a timer?

Green juices and stir-fries- take no time at all. If I were single I'd probably rely heavily on the Fuller Longer range from M&S.
