when young DCs are ill

When one of your young DCs is ill, do you try to separate them from your other DCs to prevent the others catching it?

Or do you just accept that they will drop like flies over the course of a few days and you will be exhausted and probably get it too?

The latter.
Somewhat impractical to keep them apart for most families.

If vomiting, I keep them separate. It’s perfectly possibly not to spread a bug around if you clean the world and practise good hand hygiene.

I am an emetophobe, though...

If a cold or other illness, it depends.

if it's a stomach bug then I separate them.

and use separate towels etc.

I don't separate them but I do discourage unnecessary contact (eg hugging each other).
