Quick, easy but nutritious meal ideas. I'm so bored of meal planning.

I hate meal planning so much.
I have depression which means I'm often too fatigued to want to cook complex meals.

I know eating more nutritious food will help me to feel better.

What are your go to meals that are quick and easy?

This week I made a cottage pie with butternut squash topping. Make a sort of bolognese/mince mix with loads of veg to bulk it up. While you’re cooking that, slice a butternut squash in half lengthways and put into the oven to bake. If you make a big quantity of mince you can split in 3 and make one third into a chilli, one third into a pasta bake, and the rest for the cottage pie. Once the BNS is baked, let it cool then scoop the soft flesh out and put it over the top of your mince in a baking dish.

You can do 3 days of meals in one go doing it like this and you can add loads of veg in the cooking so you don’t need to add any when you serve.

I like a salmon fillet and veg for the ultimate simple meal.
You can marinade it in a teriyaki sauce and make a spicy Asian dressing for your green veg if you want to fancy it up. Cous cous makes a nice side and is so easy to prep.

Also, sometimes when I’m feeling low and uninspired with meals I find the big rack of Schwartz mixes in Tesco. They are often 4 for £2. I then just pick up the bits I need for each recipe. I find I then cook things I wouldn’t normally have. They may not be Uber healthy (but of salt/sugar for example) but they are quick and easy and tasty.
