Doesn’t meat go cold when you rest it?

I’m really rubbish at resting meat - I appreciate it does help the taste, but it goes cold. I wrap it in foil, I’ve tried putting tea towels over the top etc but then it’s just luke warm meat which isn’t very appetising.

Currently have a very nice steak in the oven, want it to be as nice as possible but also not cold. Any tips?

I leave mine on the Tracy/tin I've cooked it on, foil and a couple of clean tea towels. I've left beef like this for over an hour and it's still hot. Chicken maybe even longer and it's still too hot to touch/hold with my bare hands.

A steak would cool a bit but a whole joint or bird wrapped properly would stay hot for hours.

Well, I have an Aga so it’s not really a problem Smile.

More helpfully, make sure you have a very warm plate to out it on, and perhaps pop some foil over the top. Get an enamel plate that you can get really hot.

How long are you resting it for? It should only need ten to fifteen minutes.

It’s a very big steak (cote de boeuf) so only resting for 10 mins - left it on the hot tray covered in foil and tea towels so hopefully it will stay hot. I guess it’s tricky as when you cook steak medium rare (which it hopefully is) the middle is never that hot anyway.

Maybe I just have a really cold kitchen! Even when I’ve done big joints and tried to rest them properly they end up cold.

Oh no, it was definitely at room temperature before I cooked it :)

Came out really well, outside was still hot when I carved it which is a bonus!
