What are you looking forward to eating once the weather starts to turn?

I can’t wait to cook a Sausage and Lentil stew with soda bread and a apple and plum crumble with custard. It’s become a tradition once the weather gets cold enough to wear coats x3 days in a row.

Thai pumpkin (or butternut squash) soup

  • please bear in mind I’ve been making this for years and so it’s not a ‘proper recipe’ per say...

Put large halved BNS in oven to roast until soft.
Meanwhile fry an onion in a large saucepan.
As it caramelises add a heaped teaspoon of Tom Yum paste. Stir in and simmer for a short time.

Remove seeds from BNS and scoop out lovely soft flash and add to pan. Cook for a little while together in pan with a small amount of chicken stock. Add a tin of coconut milk - this can be the reduced fat version. Or if you’re on a heath kick you can use half coconut milk and half stock.
Leave to simmer gently until really hot but not boiling.
Blend.
If too thick add some chicken stock.

Enjoy! And keep leftovers in the fridge (due to coconut milk)

Oops totally forgot! Add a thumb sized pieces of ginger (chopped) with the onion. I don’t add garlic but you can if you like it garlicky 😊

Sweet potato, red pepper and red onion soup.

I'm veggie, but love making slow cooked stews for dh - beef in ale or bourguignon. Lamb shanks in Moroccan spice. Slow cooked Greek lamb that just falls of the bone.

Also a lovely veggie stew with dumplings, just have to remember to use the veg suet...

Sausages braised in cider I just mentioned it to DP and he moaned (in a good way)

I love this thread so really want it to keep going.

I’m thinking of toad in the hole, a lovely slow cooked beef stew and I could do with a really good beef bourguignon recipe.

I love coming home from an autumny walk to have a hot choccie. There was a brilliant recipe for hot choc on one of the Christmas recipe threads.

Speaking of stew, does anybody have a recipe for a wonderful, old fashioned vegetable stew which doesn't involve tinned tomatoes? The sort that you can cook dumplings in?

When I move back to the UK in the autumn after a few years abroad, I will be eating:

Sausage and mash
Roast dinners
Shepherd's Pie
Sausage, roasted root veg and lots of gravy
Spicy butternut squash soup
Fish pie
Buffalo chicken and bean chili
Roast potatoes with everything

I can't bloody wait Grin

I sweat a couple of sliced leeks, add a bag of this and a bag of this topped with some really good stock and simmer / put in oven for an hour. Throw on some dumplings about 20 mins before the end.

I have had a complete Crumble revelation!! Honestly, it's life changing. For the first time yesterday I cooked the crumble separately and added it to the fruit compote. Did it for a family do and everyone loved it. So much lighter and you get the buttery flavour of the crumble.

Roast butternut squash soup, braised Chinese beef, stew and dumplings, sausage and mash and hotpot. As my boots and winter coat are out today can see us having all the above very soon. Will be ordering Stewed and debating buying a slow cooker. Normally just use my Le Cruset and the oven timer.
