Increasing veg intake.

I really want to us to add more veg to our diet.
Evening meals in next weeks shopping is Salmon and med veg, chicken curry (easy to add veg to), fishcakes, spag and meatballs and homemade burgers with chips.

What veg would you add to these? DS and DH are quite fussy. DS won't eat a veg if he sees it and DH doesn't like courgettes, leeks, or salad.
Suggestions appreciated as DH may as well be made of stone right now.

Salmon and med veg - already got the onions/peppers I'm guessing, I'd add broccoli and warmed tomatoes.

Chicken curry - spinach, cooked tomatoes, onions, peppers, I personally like curried sugar snap peas but it's not for everyone 😂

Fishcakes - onion, spring onions, sweet corn, peas, and then broccoli and carrots on the side. Could try sweet potato mash too if you're making them yourself.

Spaghetti - in the sauce is tomatoes, I would add peppers, onion, maybe grated or small bits of carrots, and then maybe add a veg to the side.

Burgers - onion in there, I would serve with sweet corn, peas, baked beans etc.

Coleslaw made with shredded cabbage, carrot.

I like homemade coleslaw but we end up wasting half the cabbage!

Grated carrot and courgette disappear to nothing in a tomato based sauce. There is also an Anabel Kernel meatball sauce with grated butternut squash in it.

Finely grated carrot and onion in the burger mix. Can put caramelized onions in the burger....
