Easy healthy dinner ideas for kids

Hi, I suffer from quite bad anxiety and at times can find the smallest of tasks overwhelming.
Does anyone have any suggestions of healthy easy meal ideas for a 3 and 9 year old that I would be able to put together even when I am have a really bad anxiety day?

In these cases I would go for bung it in the oven type food. You can do this without being unhealthy for example: good quality sausages with mini potatoes and carrots can all go in the oven together for about 20 mins.

When you are having a better day why don't you cook up some batches of tagine and spag bol? You can then defrost small portions in the morning and serve with quick cook spaghetti or the microwaveable rice pouches that are ready in 2-5 mins.

Batch cook some tomato sauce and throw it over pasta with some grated cheese.

Chicken wraps are a winner for my dc...
Get two chicken breasts and drizzle with oil...stick in the oven or I put mine on the griddle. When cooked, slice them. Put on a plate with bagged salad and tortilla wraps and let them assemble.

Chicken goujons, frozen mash and peas is a perfectly acceptable meal for kids and quick and easy.

Fish finger wraps (as above but mayo, fish fingers and lettuce)
Sweet potato fries
Fish cakes (Aldi do great ones that you can keep in the freezer)
Omelette
Pasta pesto
Packet of microwave rice in a pan with frozen peas and a bit of curry paste, sprinkle with crushed salted cashews to make it look like you went to trouble!
Frozen pizza
Wrap pizza: spread a wrap with tomato paste (or sun dried Tom paste), salami or chorizo or whatever you can find, handful of rocket or spinach and topped with grated packet cheese.
Beans on toast
Fancy beans on toast (spoon of curry paste into beans and naan bread as toast, If they need/like it halved cherry tomatoes and chopped coriander are nice additions)

I’m late on the frozen mash front (always assumed it would be like smash 🤢) but it’s a life saver.
Tortellini frozen in portion size - just chuck in boiling water for 5 minutes, add Passatta and grated cheese. If you’re feeling adventurous chuck in some frozen veg while the pasta is cooking, sweet corn and broccoli will cook in the same time.
One pot casseroles, ready diced meat, frozen veggies, tinned potatoes. No need to Brown the meat just chuck it all in.
Jacket potatoes and beans/tuna
If all else fails thin crust pizza (not as ‘bad’ as people think it is) served with bagged salad. Or tbh something simple like tinned mackerel on toast. Call it a fancy name

Eggs in some form are so quick and easy and healthy. My kids love ommelettes and will eat most things in an ommelettes.

Pasta with pesto, peas and a microwaved fillet of salmon flaked in is really easy too.

I make my own chicken nuggets for the kids by coating chunks of chicken breast in flour, egg and breadcrumbs and serving with sweet potato wedges and corn on the cob.

Beans on wholemeal toast with grated cheese

Jacket potatoes with microwaved steam pack vegetables and sausages

Frozen fish in the little packets with microwave veg rice pouches

Bowl of salad. Plate of warmed through tortillas. Chopped up chicken breast

Fresh pasta with pesto or grated cheese and peas stirred through

wraps of various kinds
picnic - chop up some cheese, ham, cucumber, tomatoes, crackers, fruit etc. My DC love this.
Cheese & tomato bread pudding goes down a treat

Might be worth investing in a slow cooker - then you can chuck meat and veg in there in the morning and it'll be done when it's time to eat.

Or, when you're having good days make lots of what you're making. So batches of lasagne, chilli, spag bol sauce, curry, stews, soups which you can defrost in the microwave and serve with rice, pasta or a baked potato.

Another thing my kids love are quesadillas with cheese inside, sometimes I can sneak spinach in. They have them with veggie sticks and tortilla chips on the side.

Also wraps with grilled halloumi and veggie sticks.
