Inspire me please?

With your tastiest recipes using mince, courgettes, tomatoes, onions, spices etc. I'm trying to have an economical month, so the mince is from the freezer, the rest from my garden or, unless its basil, thyme , mint or rosemary, the cupboard.
There's no prizes I'm afraid. I like spicy foods, dont mind lasagne, not particularly familiar with cooking with mince.

I would make something like courgettes stuffed with mince in a herby, tomatoey sauce, or more likely decide that I CBA pissing about stuffing the courgettes and just make mince, tomato and courgette sauce and serve with salad and cheesy garlic bread or pasta.

A deconstructed stuffed courgette if you want a fancy pants name for it.
