DH and job decision

I would really appreciate some advice from impartial MNetters about a difficult career choice facing my DH. I can't give too many details but will give the basics. He currently works in a very stressful job involving lots of travel, misses out on lots of family time and wants to change jobs as soon as possible. He has two options in the pipeline and they are such different choices we really don't know what to do.

Option 1
DH is in the final stages of interview with a company offering a job in a similar field to his current role. It would be a step down in terms of responsibility and pay but would be regular hours and UK based. We could manage on the reduced salary but would have to budget carefully and there wouldn't be any spare money for extras.

Option 2
DH is also in the early stages of discussion regarding buying an established business with current colleagues. This could potentially make huge amounts of money and in 10 years time or so we would then be financially secure and could retire in our mid 50s. All the obvious advantages of this would be ours - finishing doing up our house, helping fund our DCs degrees, help get them on the housing ladder etc etc.
This venture is not risk free but has the potential to be life changing.

The biggest sticking point is that he would have to stay in his current role for 6 months to a year, before the business could be purchased, and so would have to decline the job offer for Option 1 which we are due to hear about any day.

Any advice? We are so stuck! We are naturally risk averse people but this could be such an amazing opportunity if it works out.... help!

I’d go option 1. steadier less risky.less financial return
With 2 yes massive chance at paying off debt, but if business fails will it bankrupt them all?
