What would you add to this meal?

Having a dinner party on Friday for dsis dbil and their 3 children (14,12,8) as well as me , dh and our kids.
Going to do a Mexican theme ... won't bother with starters but for main will have :
Loaded nachos with all the toppings
Nachos with just cheese (for fussy children)
Tortillas
Honey chicken strips
Onions and peppers
All the dips
What else ? Tacos ? Mince ? Should I do rice as well? What other veg?

Also need help with pudding ... will do chocolate brownies and ice cream to keep the kids happy but should I do something a bit fancier as well? Maybe even Mexican themed?

I'd do salad, garlic bread if you want carbs, sweet potato wedges, defied beans, salad and maybe some quesadillas.

I'd also serve olives and other nibble bits maybe.

I'd do chilli chocolate cake (Betty Crocker mix with added chilli) or maybe homemade tequila sorbet. For the adults.

Or churros and Nutella to dip.

Or maybe Mexican rice pudding or chocolate fondue and stuff to dip. A chilli version for the brave.

Potato wedges
Chilli
Chicken and cheese quesadillas

For pudding churros (you can buy them frozen in the supermarkets now if you didn't want the faff of making them)

Oh wow amazing ideas thank you ! Will definitely be adding refried beans and wedges (sweet and normal) to my list ! Love the idea of churros will give that some thought also :) thanks so much
