Use by date?

I have some sweet potato ready cut fries to cook in the acti fryer. But they have a use by date of 23rd August. 2 days ago! Normally I wouldn't, but they look and smell okay.
It is 'use by' though not 'best before'
What would you do? Cook or bin??

Cook. It's veggies not meat. Veggies helpfully tell you when they're off by going mouldy. If they're not, crack on. Grin
