What is "Ash" in a list of ingredients?

I'm looking at a box of dried tamarind from Thailand, and it lists Protein, Carbs, Fiber, and Ash. What is Ash?

A quick google indicates it could be the burned seed husk, leaves or bark of the tamarind tree. So, ash, really!

But there's nothing burned. The tamarinds are dried, AFAI can tell.

I've tried googling, but am non the wiser.
