I also have the post Christmas blahs. Thinking of everything that needs to be cleared up, and everything that needs to be done for the new year. Sigh.

I am determined to use up all the Christmas leftovers so have started a Christmas leftover vegetable theme- we seem to have mountains of veg left! Today it was beetroot.

Tomorrow I plan to make parsnip and roasted garlic soup. I detest parsnips..... but have been told the soup will be a winner. :)

Egusta - your recipe looks delicious, as always. I've never been a fan of beetroot, but I'm tempted to try it now.

Truth is it is a lot better if you fry some cubed beef into it as well, so it is a beefy soup, but DH is so food-ed out and meat-ed out that he begged for the vegetarian version. :)

The key is the sour cream and dill though- it adds depth.
