I’ve gone non UPF, I just can’t believe the difference it’s made in a week

I feel like such an idiot. I can’t believe how well I feel, how much I’m ready for bed and how much better I sleep.

this shit is radical. I was eating 40% upf (a teenagers diet is 80% 😱) and I feel brand new.

i have zero pain in my joints, during the day loads of good energy

does anyone else do this ?

You need to get up to 70-80% cocoa solids as all the others have lots of sugar and usually emulsifiers.
Lindt, Green & Black etc.

I buy the strong ones from Lidl. Keep them in the fridge. Two squares a day when I've some in.

Yes! It's from her book 'A Modern Way to Eat'
There are lots of very lovely sounding recipes but they are all so expensive! Pistachios, black sesame seeds, coconut oil/sugar.... however, I make this every week and it's a winner.

That actually does sound delicious. Could you use rye flour (which I quite like)?

I'm sure that you could but you'd need to watch it for the rise rather than time it as rye goes a lot quicker than white or wholemeal IME. I prove it in a glass bowl so I can keep an eye on bubble formation, v helpful when it's so hot and timings are accelerated.

Yes it was an awful type of margarine in the 80s. Said 'unsuitable for frying' on the front as it was made up of awful emulsifiers etc.

The clue is that it is made from buttermilk. That’s the watery residue left over when real butter is made.

On the topic of ready meals, there are a few providers who do low or entirely non-UPF ready meals and ones that aren’t laden with salt and sugar. I use Field Doctor to stock up freezer sometimes and their stuff is really nice and often low sugar, none of the meals I’ve ordered have UP ingredients in. Some Cook meals are UP-free too. Also Frive stuff.

White flour is not UPF. It has stuff removed, (vitamins ignored) not added.

Taming twins has a no knead bread that tastes just like sourdough. Mix all ingredients together then leave overnight then pop in a covered casserole dish and cook.
I would make it more but my DH only likes soft bread not crusty.

We eat a upf free diet and find there is very little we have to cut out. There are brands out there that do upf free foods for example Piper's Farm do upf free sausages, Jason's do upf free bread, a lot of shortbread is upf free, you can get upf free ice cream it is just about checking the ingredients. Although these brands are more expensive.

We also cook more at home so we bake a couple of cakes a week for treats for the kids. You can reduce the sugar in them my kids now find shop bought cakes way too sweet. Homemade pastry is so much better than commercial same with wraps which we batch make a freeze.

Do you have a go to recipe for wraps please? I can manage a normal loaf but would love to get into making my own wraps, flatbread, foccacia etc.

If people are silly enough to buy 'low calorie' or 'light' products then yes they risk consuming artificial sweetners.

I wish - I am severely intolerant of almost all artificial sweeteners and some make me very ill indeed.

They have crept into many "non diet" foods as well. Even cider and wine isn't safe from them. Even worse, under alcohol labelling laws they don't need to be listed. Even with foodstuffs, stevia can be listed as a "natural flavouring". Luckily I don't react to that but I can certainly taste it - it has an unpleasant weird liquorice flavour. It's in a lot or premium foods now - Fentiman's is just one.

My mom referred to Gold as “candle grease”. I agree with her. Vile stuff.

We only use butter now. Much nicer. And non UPF. It’s really important to get healthy fats in your diet. Fats are not “bad” or unhealthy per se.

I was going to say I see your Gold and raise you Marvel. However I’ve just googled and you can still buy it and it’s not as full of rubbish as I thought. It’s just skimmed milk fortified with vitamins.

which kind of proves the point that others were making which is many of us don’t have a clue and I include me in that!

because of my low calories I was definitely eating a bit more than a third of upf - so the crisps and chocolate were main swap plus the chicken kebabs were a upf (ridiculous, they were the piri piri ones from Ocado). Also I was eating sourdough so I’ve dropped that for now until I find one that’s non upf that I like.

i thought I’d miss bread but I don’t yet. I love potato salad.

What do you make your potato salad and egg salad with sauce wise?
With 200 cals of chocolate plus the nuts it seems a lot of food for 1000 cals?
I'm genuinely interested.
