Thanks Furball. (And I like the melt off me bit!
)
Thats really good. Littlefish really will be a little fish!
The trouble is though, the sheer enormity of what I have to lose scares me. (no pun intended) So I get slightly panic stricken. And thats when I do daft things like comfort eat.
I have had a healthy day today. All good so far.
Syns: 2 caramel snack a jacks, 1 mini truffle egg, and a mini cup cake with a mini egg on top from M&S. (There are still loads of chocolate eggs at work, but people are too sick of the sight of it to eat much!)
Snack a jack 6 syns, not sure about the others, but must be somewhere near 6?? ish.
Had a lovely lovely lunch.
Did a stir fry minced turkey recipe last night for today and it was gorgeous. (should have been minced chicken, but had minced turkey in freezer! Actually have never seen minced chicken..)
It was another Bill Granger recipe. I adapted and used frylight instead of the 2 tablespoons of oil he suggests. It was soo simple, took 10 mins tops.
Free on red and if you have rice, add more greens to make it free on extra easy.
Stir Fry chicken with basil. (From Bill's Everyday Asian)
4 garlic cloves
2 large red chillies
¼ teaspoon sea salt
2 tablespoons light flavoured oil
600g chicken mince
400g snake beans or green beans cut into 5cm lengths on the diagonal
2 tablespoons fish sauce
1 tablespoon dark soy sauce
1 tablespoon caster sugar (I used splenda)
Small handful Asian basil leaves or regular basil leaves
Pinch ground white pepper
Pound the garlic, one chilli and salt into a mortar and pestle until it forms a paste. Alternatively, place the garlic and chilli on a chopping board, sprinkle with the salt and finely chop with a knife using the side of the blade to make a paste. Slice the remaining chilli thinly.
Heat a wok or large non stick frying pan over medium-high heat. Add the oil and the garlic paste and sliced chilli and cook, stirring, for 30 seconds or until the garlic starts to colour. Add the mince and cook, stirring, for about 2 minutes or until starting to brown, then add the beans and cook for a further minute. Add the fish sauce, soy sauce and sugar and stir-fry for a further 30 seconds.
Remove from the heat, stir in the basil leaves and white pepper. Serve immediately with steamed rice
