What to do with gram/chickpea flour?

Naturally I bought a 2kg bag because I needed 35g for a recipe 😆 What do I do with the remaining 1.965g?! Besides making my original recipe 56 more times (which I could be tempted to do!)

All suggestions welcome. Bonus points for healthy ones!

I've become gluten intolerant and have also started making pizza bases with gram flour.

I am definitely going to try the Burmese tofu and the seeded cracker recipes!

Flour and water (and cumin seeds, because I like them) - make it like a pancake batter, ideally let it sit for a while before cooking it in a frying pan or crepe pan.

I’ve just used some to make courgette fritters for lunch today. Low in calories, high in protein (it was courgette, gram flour, cottage cheese, mint and chili). Quite pleased to find something with fewer calories than a sandwich.

Socca. You mix it with water, salt and pepper and olive oil to make a batter and fry it like a pancake. It’s really good especially accompanied by Mediterranean type tomato/pepper type things.

This is the recipe I used. Followed it to the letter as the first time I made it and it was so good. I plan to make it again. I'm calorie counting so plan to make it again without pastry in some muffin tins instead, I think it should hold its shape well

Full disclaimer - stolen from someone who shared it on Facebook, don't know where it originally came from!

I then had 3/4 of a thing of silken tofu had left so I had a play around and blitzed it up with some peanut butter, a bit if maple syrup and a dash of vanilla essence to make some desserts. Pretty high in calories because of the amount of peanut butter I used, but also a good little hit of protein. Will definitely be making those again and experimenting with flavours too!

I toss cubes of tofu in seasoned gram flour then 7 mins in the air fryer. Easy protein based snack

This sounds great, but I'm not sure there's a vegan equivalent of cottage cheese (in terms of either texture, taste or protein content!) unless someone else knows something I don't!

Chickpea flour pancakes are delicious too. They're lovely and savoury and I like to add stuff like spinach and thinly sliced tomatoes to them and roll them up.
