What to do with gram/chickpea flour?

Naturally I bought a 2kg bag because I needed 35g for a recipe 😆 What do I do with the remaining 1.965g?! Besides making my original recipe 56 more times (which I could be tempted to do!)

All suggestions welcome. Bonus points for healthy ones!

Socca. You mix it with water, salt and pepper and olive oil to make a batter and fry it like a pancake. It’s really good especially accompanied by Mediterranean type tomato/pepper type things.

Indian food batter is often made of gram flours. Ie for bhaijias and pakoras etc

I used it in pakora or bhaji recipes. Any fritter type recipes, really. I have also made flatbreads with it, instead of chapattis when a gluten-free friend came over. They were very tasty.

You can make great chocolate chip cookies with chickpea flour. And banana bread; it just takes longer to bake.

This is how I ended up with it in the first place. Quiche was amazing though and a second generously sized slice is calling my name from the fridge...

Thank you for all the suggestions. I've done a lot of Googling and they all sound amazing if not particularly healthy 🤫

Some of the pancakey type things would go well with some other recipes I have saved recently too

I make pizzas: 90g flour, about 100ml water, electric whisk it up. (play it by ear for your preferred thickness). Fry in a little oil, about 2 mins eat side,Ile a pancake. Then decorate like a pizza and bake in the oven. It's already cooked, do just cook until the cheese melts. Ta-da! I'm gluten free and I love this base!

As PPs have suggested, falafels and flat breads. Also we love the cookery book Fresh India by Meera Sodha which uses gram flour very liberally throughout. Lovely recipes!

I made some seeded crackers from a. FB recipe recently and this has reminded me to make another batch.
1 cup seeds (I used Lidl mixed seeds plus some chia seeds)
2/3 cup gram flour
Herbs/Spices/Nutritional yeast to flavour (whatever you like, I used oregano, chilli, garlic powder)
Salt
2 tbsp olive oil
6 tbsp water or however much needed to make a dough
Leave to rest for 5 mins then roll out between baking parchment to about 0.25cm
Bake at 160 for 20-25 minutes.
Let cool completely before breaking into pieces of whatever size you like.

They're really good with dips like hummus etc

Nadia Hussain has a great recipe for random veg pakoras which uses gram flour. I make them a lot to use up sad looking old veg!

Make Burmese tofu. I used to faff around blitzing chickpeas but now I use gram flour and it’s saved me time and effort.

You can just use it up in any bread recipe, about 10% of the required flour weight as gram flour, 90% bread flour.

Did you use only flour and water for the flatbread? I'm interested in making these for my gluten free hubby....are they soft

Samosas are delicious and sort of flakier made with gram flour. My Indian friend makes them. Sorry, haven't got the recipe off hand.

Vegan omelette. Just make a thickish batter, make sure to add a little baking soda and salt. Works well with mushrooms or courgette as a filling. Make sure veg is precooked and drained well.

Flour and water (and cumin seeds, because I like them) - make it like a pancake batter, ideally let it sit for a while before cooking it in a frying pan or crepe pan.
