I typically do sausage, fried tomatoes, baked beans, some sort of bread, what else?

And I eat this sort of thing in the evening. I’m not cooking like that for breakfast!

What are the best brands of vegan sausages would you say?

FunIsland · 31/07/2024 22:23

Spinach, mushrooms, roasted tomatoes, avocado and hash browns.

….mmmmmmm…..

For me it has to be Richmond meat free.

I make batches of Felicity Cloake's recipe vegan sausage and grill in patties. Homemade campfire beans bulk cooked and frozen. Tofu scramble. Sweet potato and kale rosti batch cooked and frozen. If I can be bothered to marinade thin slices of aubergine or root veg or celeriac in soy, liquid smoke, maple syrup and a tiny bit of vinegar and oil the day before I air fry that. Grilled tomato and mushroom if they need using up, but the sausage is mushy based and lots of tomato in beans so not really needed. Jason's wholemeal Sourdough. My neighbour's blackcurrant jam.

Strong roots garlic roasted sweet potato - sooo good, 10 mins in the air fryer (on a bit of a health kick and they are a better option than hash browns!)

A little ramekin of vegan egg yolk for dipping 🤤

My ideal vegan full English would be:

Scrambled tofu
Plenty of toast
Baked beans
Sausage
Avocado
A small amount of fried mushrooms but not slimy ones
Maybe a bit of crispy kale or something else green

Scrambled chickpeas with black salt and lots of nutrional yeast and add ny into the beans too

Very rare I would eat this but it would be half a big fried tomato with a little garlic and oregano, a large fried Portobello mushroom, home made cannellini beans in tomato sauce, scrambled tofu with fresh spinach, sliced avocado and toasted sourdough. Served with hot sauce and lime wedges .
You’ve made me fancy this now. 😀

Hash browns or fried sliced new potatoes, avocado (I usually make them into a kind of guacamole, so mashed with chilli and lime and maybe some finely chopped tomato), garlic mushrooms.

If I wanted to.make it a bit more if nice/special I'd make the baked beans myself rather than using tinned - so either cannelloni or butter beans, fried onion, garlic, chilli, spices and tinned tomatoes all simmered while you cook everything else. I'm also partial to braised red cabbage or sauerkraut though I know that's a bit odd for a fry up! I like a lot of strong flavours 😋

I'm not keen on a lot of meat substitutes, especially bacon (if anyone can recommend a good one please let me know!) although I don't mind some vegan sausages. Don't like scrambled tofu either though I know many do!

Old school traditional fry up for us, but obviously vegan! We prefer "Richmond 8 Vegan Meat Free Smoked Bacon Rashers" along with whatever sausages are on offer! We tried the vegan black pudding, once and never again! Plus you must have baked beans and hash browns. Completed with some part baked rolls.

Hashbrowns, veggie sausage, fried potatos, mushrooms, tomatoes, toast, beans, friend pinapple, fried banana, fried onions & green peppers mix. Lots of ketchup and vinegar.
