Sauteed with olive oil and onion and vegan sausage.
In blended soups.
As chopped and used in fillings for savory pastries such as empanadas. Or just tossed in with whatever else your doing.

It needs flavour and other food with it, instead of just being alone.

Maybe your oxalate load is already high and thus you have a natural aversion to oxalate loaded food?

BeastOfBODMAS · 06/01/2022 16:08

Here you go -
www.onearabvegan.com/2015/03/vegan-spanakopita/

I make it with violife Greek style

minipie · 06/01/2022 16:09

How much did you cook it? It needs barely any cooking at all - till it’s just wilted and no more.

MooshWoosh · 06/01/2022 16:11

I wilt mine in a frying pain. Drizzle of olive oil, large spoonful of garlic, salt, pepper, maybe a touch of lemon zest or a few chili flakes to mix it up. It takes maximum 5 minutes but if it looks wilted then it is good to go! Delicious :D

Ninkanink · 06/01/2022 16:11

Have a small taste every day for 30 days and you will more than likely get used to it and once that’s done you can learn to love it.

I make a really delicious butter bean and spinach stew. Mine isn’t vegan because I add chorizo, but I’m sure there are lots of good vegan recipes. You basically need to balance it with other flavours - sweet, rich, dishes benefit greatly from the bitterness.

Branleuse · 06/01/2022 16:12

why do you need to love spinach? Surely you either like it or you dont?

Saying that, its not supposed to be bitter. I dont think it has loads of flavour. I put handfuls of baby spinach in stuff and it melts down to practically nothing.

Eating isnt supposed to be a chore. Do you like other green veg?

JasmineGarden · 06/01/2022 16:15

I eat a lot of spinach.

Whenever I steam veg I throw handfuls in at the end.

I wilt it in butter (you can use vegan butter equivalent)

In any oven cooked dish.

Wilted with cooked mushrooms, avocado & seeds/veggie sausages.

It's more about what you did that made it bitter that needs sorting really.

Fresh/frozen?

How did you cook it?

ItWasntMyFault · 06/01/2022 16:18

I prefer it raw instead of lettuce.

SheWoreYellow · 06/01/2022 16:19

Sauté in butter with garlic and nutmeg till just wilted. Then squish the water out.

Clarissa76 · 06/01/2022 16:20

A squeeze of lemon takes away any bitterness. Or try it with butter/cream and nutmeg.

Clarissa76 · 06/01/2022 16:20

Oops just realised that this is the vegan board!

WhyDoIDoThis1 · 06/01/2022 16:21

What about fry with a little oil, chilli flakes and a few garlic granules.

TabithaTittlemouse · 06/01/2022 16:23

To me that’s like asking how to love breathing! I adore spinach in all forms!

You don’t have to like it (although I think it’s madness not to) I don’t sweetcorn!

Craftycorvid · 06/01/2022 16:24

Sag Aloo. That’s a complete sentence. Grin. And my favourite way with spinach.

Kite22 · 06/01/2022 16:24

We buy the frozen cubes from Farm Foods and just drop a couple into many dishes to add the 'goodness'. It doesn't really 'taste' , for anyone to dislike within a curry or similar.

RoboticDog · 06/01/2022 16:25

I cook it into dhal, yummy and lots of other flavours in there too

Justkeeppedaling · 06/01/2022 16:25

Sag Aloo!!

apric0t · 06/01/2022 16:26

Gently fry spring onion and garlic , Chuck in a bag of spinach, when it's wilted, pour in some soya single cream and nutritional yeast and then season with salt and pepper. Yum

Fivemoreminutes1 · 06/01/2022 16:27

It goes in almost all of my curries:
Satay
Chickpea
West Indian

AdaColeman · 06/01/2022 16:31

Try making Eggs Florentine with it, a wonderful combination of flavours and textures, (and colours). Make it when you've got plenty of time to enjoy the preparation and eating.
A dish truly made in heaven.

wheresmyshoe · 06/01/2022 16:33

Use baby leaf. I lightly wilt it in steam or throw in a stir fry at the very end. It's also lovely as a salad leaf.

AdaColeman · 06/01/2022 16:34

Oh No! Sorry, I didn't notice this was on the Vegan Board. I do apologise.

itwasntaparty · 06/01/2022 16:37

Are you using baby spinach?

ihavespoken · 06/01/2022 16:39

This is amazing - I use spinach instead of kale. Tasty without the cheese on top too, although a vegan cheese would work
