Help me to love spinach

Just as the title says really. Today I made a dish and it was so bitter.

I want to love it but am struggling

I cook it from frozen and add to anything from jacket potato with vegan pie to knocchi with pesto and sauteed mushrooms and there's also a spinach, orzo pasta and pea soup (BBC good food) which I made which is nice and filling. Maybe add butter to it?

Try making Eggs Florentine with it, a wonderful combination of flavours and textures, (and colours). Make it when you've got plenty of time to enjoy the preparation and eating. A dish truly made in heaven.
@AdaColeman - OP is vegan so can't have this...

I have it mixed with romaine as the base of a salad.

I am vegan but dislike spinach, it's not obligatory to eat!

Oh yes, eat it every which way for sure - that way you will become more accustomed to the flavour of it. I also love baby spinach in a salad. Throw a handful in whenever you make a soup.

wilted with garlic and black pepper and a squeeze of lemon
wilted with ginger, garlic and sesame seeds
added to curries
added to soups

Thank you!!! I shall try these (starting with sag aloo).

And for PP who said why do you have to learn to like stuff... palettes change! I never used to eat carrots or tomatoes but tried new recipes and now eat them every week. Don't you ever try things in different ways?

Can't believe no-one else has suggested you add nutmeg. I couldn't eat spinach without nutmeg, because it seems too bitter otherwise.

As others have said, just wilt it in a pan i.e. don't drown it in water. Whilst it's wilting, grate in some nutmeg and add a little salt. Delicious!

There is an amazing Deliciously Ella recipe for sweet potato, chickpea and spinach curry, which is vegan. Definitely works well with coconut milk. I find spinach needs cream to take the edge off it, or tomato sauce - it works well dropped into tomato sauce for pasta or gnocchi.

I've had this and it's very nice. Also chickpea, mushroom and spinach curry.

Have it with feta or have it raw, shredded finely like coleslaw in salads with a pomegranate molasses dressing and walnuts. I always use baby spinach as a substitute for kale in recipes as it works well and is more easily digested.

You might like Catalan-style spinach - fresh spinach leaves typically steamed and then quick-sauteed with olive oil, onions and/or garlic, toasted pine nuts, and raisins/sultanas/currants. I think the bag I bought wasn't as fresh as it could have been, despite being in the fridge it was slimy this morning so I threw it out. Shall have another go next week.

Liquid seasoning makes anything taste good but u can't use alot of it

My 4 year old DD didn't like spinach
I gave her a couple of leaves with every meal and she happily eats it now she's just got used to the taste

I only eat it cooked when it's warm i don't even let it wilt

I don't mind spinach generally, but this I can eat by the bowlful: Korean spinach side dish (shigeumchi muchim/namul) - basically, blanch the spinach & squeeze out the excess water. Splash of soy sauce and sesame oil, mix to coat and then sprinkle with toasted sesame seeds.

If it's bitter, try a different sort of spinach. Baby spinach is very easy on the palate. I find home-grown spinach much more bitter and earthy tasting.
