Vegan Cream Alternative?

Hello!

Got a real craving for mushrooms on toast and am trying to move to plant based.

My local health food shop sells heaps of alternatives but as I've learnt with vegan 'cheese' some are better than others!!

Can anyone recommend something I can put a splash of in my mushrooms?

Oatly do both a single cream alternative and a creme fraiche alternatice which both work for me in lots of recipes Smile
(I’ve got a dairy & soya allergic child!)

I don’t do dairy, I find the oatly cream is better than alpro cream which is far too sweet:

Oatly although I do like the alpro one too - I sometimes add a splash when I have pesto pasta - sooo good

Definitely oatly. Both the single cream and crème fraiche are good. I use them in soups and curries. The crème fraiche also makes a good cream cheese substitute for making dairy free cheesecake.

Excellent! Unanimous then. I love Oatly Barista so I'm not surprised the quality is good! Fancy mushrooms, 'cream' and tarragon on toast for dinner!

Was delicious! Was a bit wet but I think that's because no fried up big portabllo mushrooms...as I was doing it I remembered John on MasterChef saying they should only be grilled!

To prevent the wetness make sure you fry mushrooms for 25+ minutes. You want to extract the moisture from them and cook until it is evaporated and the mushrooms start to turn golden brown. Then add the tarragon and cream. Hope that helps for next time!

I’d pop something green with it, but I’m obsessed with having green at each meal including breakfast (I had mushrooms and some kind of Choi from the Chinese supermarket for breakfast)

Am still hungry though... anyone tried Vegan Magnum? The shop downstairs sells them...

Vegan magnums are really good-expensive but very much like any other magnum (I’m not vegan).

Neither am I. I'd like to be but I recognise that veganism is a lifestyle not a fad. If I go in all guns blazing to something I tend to give it up just as quickly, so I'm trying to make changes over a longer period of time so the shift doesn't feel so dramatic and I'm more likely to keep it up! I'm not fussed about most meat but fish and cheese seem to be the things I'm struggling with the most; I figure once I've learned enough lovely vegan meals and got used to some vegan alternatives they won't feel like such a gaping hole in my life!

I thought Magnum was yummy! Slight texture difference to a regular one but not so you'd notice.

My tip if you want to give up cheese is to wait a while until you try the alternatives... if you had cathedral city yesterday and violife today you'll be very sad and will never give up dairy! I went cheese free for a good few weeks maybe months before I could tolerate and eventually enjoy vegan cheese!

Yes great tip. Most of the alternatives are not that similar to the animal based products. They’re not really designed to taste the same. The fact that it’s ‘cheese’ is kind of a suggestion of how to use it. Ie don’t sprinkle it on your granola! But it won’t taste like cheese as such. Same way as veggie sausages don’t taste like the meat ones.

What I mean is you’re not looking to recreate the taste or texture of the animal based product, you’ll end up disappointed. But you might be looking for replacements.

By the way I made a weeks worth of this recently and I'm still swooning over it. I added way more Orzo than the recipe called for though.

It's the cheese that I struggle with. I'm not vegan or trying to be if I'm honest but I have two children with dairy allergies and an trying to cut dairy from my diet. I didn't eat a lot of it anyway but I really struggle with cheese the alternatives just aren't nice enough to change to! Chocolate gives me similar problems but I love dark chocolate so try and stick to dairy free dark chocolate. Its hard to find "butter" that isn't partly made of plastic either!

myusername I made a lovely vegan cream cheese, it was soaked almonds with garlic (and any herbs that you like really). chives and yeast flakes, with some salt and olive oil, you just blend the lot together. It's more of a spread I suppose.

I'm going to try that thank you! Of nothing else my dairy intolerant DC's might like it. I have a tub of nutritional yeast but have never used it as I'm not sure what to do with it!
