I always dot the Ottolenghi ones. The recipe is on this blog. I don't bother coating them in sesame seeds because I never have any. I don't make them often as they require time and forward planning but they're really delicious.

You can buy a mix in Waitrose/Ocado that you just mix with water. In lovely.

All I can say is limit the water content and use very hot oil. Otherwise they are bound to fall to bits when being cooked.

That ottolenghi recipe is interesting that he uses soaked but uncooked chickpeas.

Oh I hadn't twigged they were deep fried. I don't feel get anything! I get anxious about hot oil.

My recipe is to blitz up canned chicken peas and add chopped red onion,cumin,salt and pepper and lots of fresh coriander. Pat into patties with floured hands and fry. Serve with squeezed lemon and more fresh coriander and salad.

I shallow fry in a non stick pan.

You can shallow fry in about 2cm of oil.

The trick is to use soaked, uncooked peas. Cooked peas don't hold a firm ball so fall apart when cooked. I learned this ten years ago from a woman married to an Israeli man and I confirmed it with my Palestinian friends ;)

Rose Eliot also uses soaked uncooked chickpeas. I rest the mixture in the fridge for an hour then form balls and cook them in the oven for a no oil recipe.

Not very authentic, but I like to make falafels with sweet potato.

I've just remembered ,I add a bit of flour when I mix the peas to bind it together and soak up any wetness.

high Grin I posted the recipe on my allrecipes account and that's the time the site has put for how long it takes Grin I laughed when I saw it too, They take roughly 20 mins for me to make, but I haven't made them since my food processor broke a few months ago.

I use the recipe from Veggiestan, although I use only chick peas and don't mix with split fava beans. It's the best recipe yet, soft and silky in the inside and crunchy on the outside.

The rules are,
always uncooked but soaked chick peas, cooked ones go too mushy and have too much water.
Always deep fry in very hot oil. I used to fry in 2 or 3cm of oil in a pan (depending on how many I have) before I got my deep fat fryer and they came out just as well.
Finally, if you want them to remain gluten free use gram (chickpea)flour to soak up any excess liquid and not wheat flour. It tastes better too Smile
As they're a faff I make up a large batch and freeze any left over, they're fine warmed up in the microwave or pan fried. You can also freeze the mixture and fry later but I fine it goes a bit sloppy when defrosted.
