Here is the recipe !!
Spread, Orange Blossom Honey, and Flower Sprinkles.
Recipe:
250g flour
60g cold butter
40g coconut sugar or regular sugar
1 egg
160g heavy cream
12g baking powder
1 pinch of salt
1 jar of raw cream
Our Strawberry Spread, Orange Blossom Honey & Flower Sprinkles
Mix the flour, baking powder, and salt together, then add the cold butter cubes and rub into the dry ingredients until the mixture resembles coarse crumbs.
Whisk the egg and sugar together until light and foamy, then incorporate into the dough along with the heavy cream.
Mix until a smooth dough forms. Lightly flour your work surface and knead for 5 minutes, then roll out to about 4cm thick.
Cut out the scones using a cookie cutter or glass, brush the tops with heavy cream, and bake for 14 minutes at
170°C.
Serve with raw cream, our Strawberry Spread, our Orange Blossom Honey, and flower sprinkles.

I made a comment on some post on instagram discussing the jam or cream first issue in reply to someone who said the cream goes first because it represents the butter which you wouldn't put on top of jam.

I said I like to do butter, then jam, and then cream. I prefer the way the cream spreads over the jam to having to dollop the jam on top of the cream.

I got a notification on my phone that someone had replied to me that I was totally wrong to put butter on a scone and probably not even British anyway!

I tried to click through to say "how very dare you!" and couldn't find the actual comment - was furious that the insult went unchallenged!

I think it's a bit of trolling but mainly a marketing ploy to try to flog more of her spread. If you google Prince William scone you get articles about Meghan's IG post way up at the top

I've never heard on a recipe that puts 160ml of double cream into the scone dough - no wonder they are so heavy looking.

You could be right - I've had that sterilized stuff that comes in jars (agree about the disappointment) - but I've never thought that honey would be a great addition though

The scones look rank though - as flat as a pancake - was she using up the expired pancake mix? They reminded me of a Farley's rusk or those "Dutch crispbakes" that were popular with cheese in the 1970s.

Someone on Reddit says it looks like a hockey puck 🤣

MM’s recipe says knead for 5 minutes! No wonder it’s flat!

That is a shocking recipe. Why on earth would you whisk together the egg and sugar as if you're making a fatless sponge, then add it to the dry ingredients along with double cream? Then knead it for five minutes?!
Why not then throw it at a wall and bake it at 400°C for an hour and a half for the full rock hard effect?

Only our Megs would think she can reinvent the scone into something better than the Brits’ 😂

ETA I’ve just seen 12g of baking powder for 250g of flour. AND nobody in the US (apart from a few enlightened cooks) uses grams for baking recipes. They’re still on cups and sticks and tsp and inches thick. Something had gone wrong in translation, and I don’t know whether she’s teaching the British how to bake scones, or trying to portray herself as British to her American followers. She’s such an amateur, at EVERYTHING!

As per the Newsweek item I linked above, most of her traffic on Instagram is non American. So maybe she's trying to play to that audience, rather that the domestic one that will not be eating scones this weekend. The stupid thing is that it's an audience that cannot buy any of her produce - not yet, anyway, but perhaps she's trying to cultivate foreign interest with a view to launching her runny spread on the world market? She won't be exciting anybody to her wares with those revolting looking pictures, though.
