Quick meals for non-cook please

This is DH again. Off on a trip in his new campervan.

Last time I sent him off with a portion of beef stew to reheat and eat with crusty bread, and pasta, pesto and tuna.

This time he'll take pasta and a portion of bolognese sauce from the freezer, but needs something for the next night.

All ideas gratefully received. I'd just go to the pub, but he's determined not ro do that.

pizza and oven chips
stir fry and rice

shepherds pie

But I’d find a chippy and get fish and chips.

If there’s a microwave get some meals from Cook. If there are some in the freezer he can just choose a couple next time he’s off on a trip.

I hear you, but I've not assumed this is my job, he's asked me to help.

He's got two rings, a microwave and a grill. Also a small fridge and smaller freezer.

If I'm not around, he lives off baked potatoes and pasta.

I use microwave rice, but heat it in a pan with a drop of water/knob of butter. as I don't have a microwave in there.

There are some good cookbooks for this kind of thing.

Veggie curry is an easy one - particularly if you start with a paste instead of total scratch. One pan for cooking up the veggies, when they are about cooked swap the water for the paste, another pan for rice.
Similarly pre-make various pasta sauces, take a wee single portion in a bag, then cook (fresh) pasta and whatever fish/meat/veg would work and then wop in the sauce.
I have done rissotto's, but they kick out a lot of condensation so I do that in weather I can have the door open.
Some simple salads - again I do things like make the salad with fresh veg/beans but just fry up some chicken as warm chicken salad. Similarly with salmon.
Bean wraps - you can buy tins of chilli mixed beans, warm, wop in wrap with grated cheese and salad.
Soups and nice bread.
Full fry up - but not too often and with door open so the van doesn't drip with fat....
Omelettes are so easy in campervan.

Kebabs! Buy flat breads and chuck anything you like on top. I like to spread mine with a spoonful of tzatiki then a packet of cooked chicken and onion with some seasonings which you can heat up in frying pan or air fryer (takes seconds) maybe some halloumi as well, bit of lettuce and some hot sauce! Can also.do them hummus, a few.chips.anything really then either fold up.and eat or keep it flat and eat with knife and fork

jacket potato’s microwave easily - tuna mayo, beans/cheese, chilli, coleslaw etc

Lots of sachets of bean/lentil chilli or curries in the supermarket these days that can be microwaved or done on the hob. Microwavable rice or jacket potato to go with it. Or if he's not a fan of lentils he could do a can of beef chilli.

Beans, egg and cheese on toast with nice bread is a great meal.

I know he's asked you to help but I do find it funny that he won't buy a meal on the pub but also doesn't have the will to plan, organise and cook something within his skillset 😂 You are very kind.

Loaf of bread or a vintage cheddar boule, some cheese, some eggs, sausages, bacon , cans of beans, steak or chicken pie, or quiche ..

Even my oh could feed himself and he refused to do women’s work. Never washed a dish, looked after a child, used a duster or a vacuum but he wouldn’t starve.
When he’s home, suggest he prepares in future …Internet is full of easy recipes..like Jamie Oliver and send him to the supermarket.
If he is old enough to go out on his own, he’s old enough to feed himself. Even my 10 yr old grandson can feed himself..edited to replace a sentence lost when signing in
Nobody is born cooking…everyone who cooks learned from point zero.

He can ask all he likes but you can say no, especially if you don't have ideas popping out of your head so you need to ask MN to do his thinking for him. Or he has baked potatoes and pasta as that's what his limited imagination is capable of.

I am sorry OP, and I know your post comes from a good heart, but honestly I'd laugh in my DPs face and refuse, tell him to get a takeaway delivered to his pad on wheels, or park up by the nearest pub. Ridiculous stuff all this planning and cooking for a person who refuses to eat anything except what is prepared for him by his wifey/partner. And he's escaping from you aswell. OMG.

You are a saint with endless patience, I'll give you that!

DH isn't a great cook so I would definitely give some suggestions.
For a weekend I would do pasta and sauce (take homemade frozen or jar or stir in for ease). Sainsbury's do a Butter curry spice mix with no nasties in it or a ready meal.

I’d go with a tinned something like chicken or veg curry either with microwave rice or cook his own rice. You can buy quite small rice cookers which can be used to cook other things like quinoa, oats, stews etc

You said there is a small freezer in the camper. Why can't he take something frozen from home such as a shepherds pie, pasta bake, lasagne etc? He can then just heat it when there and make himself a side salad.

I genuinely find it hard to imagine a grown man being unable to figure out what to cook when he’s got two hobs, a microwave and a grill?!? It’s so, so useless. Hundreds and hundreds of microwave meals in the shops if all he can do is hot something up.
I wouldn’t tell him to fuck off, that’s be rude. But I would be confused about why his brain couldn’t work it out for himself.

Exactly. It’s not like he’s hosting a dinner party for friends by himself and asking for suggestions for how to pull off something a bit complicated. And it’s not like he’s backwoods camping with a small fire and a tiny camping stove and a fork, having never done it before.

It’s “eat food for myself for one evening, in a kitchen”.
